Sure, your food might taste good … but is it ephemeral? Apparently, that’s what Chicagoans wanna know as pop-up fever sweeps the city. It’s not enough just to go to a bar or a restaurant anymore. You gotta pop up!

Social media fuels the hype — and the FOMO. Luckily, some venues are hosting pop-up series all summer long, so you’ll have multiple chances to get some elevated pub grub.


Plus, let’s be honest, pop-ups just feel like a party. That’s why I’m there.

Rain or shine, Maria’s is highlighting a different South Side restaurant every Tuesday this summer. Things kicked off last week with carne asada from Solazo. This summer also marks a return for Maria’s Tuesday night karaoke 🎤

Sportsman’s in Ukrainian Village

Sportsman’s is that girl of Chicago summer pop-up cuisine. The bar came out swinging with a Kasama kick-off, and the party’s still going. Dubbed the 2025 Summer BBQ Series, heavy hitters include Mirra, Avec, Hawksmoor, and Lula, plus a cocktail bar takeover June 15. Go on, be that girl. But get there early — the Sportsman’s patio gets packed even without the promise of high-end food.

Is there anything more Chicago than a hot dog smackdown? These weekly rumbles are taking place on the Perilla patio throughout the summer, pitting Chicago’s top chefs against each other. These cooks hail from some of Chicago’s fave foodie spots, not hot dog stands, so you’ll get to see some inventive takes on a classic. (Though personally, I find Home Depot dogs hard to beat.)

Spilt Milk in Logan Square

Spilt Milk is operating on multiple pop-up levels. Recently, Chubby Boys, a smashburger spot in West Loop, began operating an outpost in the back of the Logan Square bar. They’re calling this a residency. Meanwhile, Spilt Milk’s back patio features a different weekly pop-up through late September: Family Meal Mondays. It’s $25 flat for a food-and-beverage pairing.

is/was brewing in Ravenswood

Is/was brewing has five pop-ups scheduled in June, including a seafood raw bar, a mole specialist, two burger nights, and Milo’s Market, a Mexican pop-up and catering joint. You can follow Milo’s Market for their upcoming appearances as well as is/was for any more summer drops.

In a slight deviation from the food-at-bar pop-up concept, Milwaukee-based Discourse Coffee is posting up at Urban Belly for three months. The counter kicks off with a party June 14 and will operate Thursdays through Sundays. Don’t go for a simple cup of joe, though. Discourse signatures include orange, oak, and black lava salt infusions … think fancy coffee.

Frank & Mary’s in Avondale

In collaboration with Mike Sula of The Reader, Frank & Mary’s is highlighting a different chef every Monday. Tonight, you can find the food stylings of Pińatta Chicago, a pop-up only taqueria specializing in heirloom masa. Stay tuned on Frank & Mary’s Instagram for their next slate of visiting chefs — dropping soon.

Electric Funeral in Bridgeport

This summer, Electric Funeral is hosting Funeral Food Daze: an ongoing partnership with different local food pop-up vendors. Jokers Cajun Kitchen, Cravins Kitchen, and Meze Table all appear this June. More events are scheduled for July, too
